Soups On!

We eat lots of home-made soups at our house during the cold, chilly winter months. One of my favorites is Chicken Tortilla Soup.... so I thought I'd share this recipe with you today.
The ingredients are.....
Chicken Tortilla Soup
3 cloves garlic, minced
1 onion, chopped
3 Tablespoons butter or margarine
2 Tablespoons flour
Three 14 oz. cans chicken broth
4 cups half & half
1 can cream of chicken soup
1 cup salsa
1 (15 oz.) can creamed corn
Rotisserie cooked chicken from the grocery store (chopped)
2 teaspoons cumin
1 packet dry fajita seasoning
2 teaspoons dried cilantro
8 oz. shredded Monterrey Cheddar cheese
Bag of tortilla chips (we like the hint of lime ones)
In a large pot over medium heat, saute the garlic and onion in the butter or margarine for 5 minutes. Add flour and stir well, cooking for 1 minute more. Add the broth and half & half. Bring to a boil and reduce to low heat.
Add the soup, salsa, corn, chicken, cumin, fajita seasoning, cilantro & half of the bag of cheese. Stir and continue to heat on low temp for 30 - 45 minutes.

Ladle into a bowl and top with crushed tortilla chips & grated cheese. Serve with additional chips for dipping. Enjoy!

Ohhh that sounds delicious! Have just come across your blog due to suddenly becoming obsessed with punch needle work... I bought my punch needle about 15 years ago and have just discovered it in a box in the attic while getting the holiday decorations.
It does seem like not many people do this in the UK, so its very nice to see all the wonderful work on your site.

I have been searching for a good Chicken Tortilla soup. I will have to give it a try. We eat lots of soup in the winter also.
